Three Crockpot Staples for Our Family

I haven't written in so long. I went back and forth about what to write. We are in such a political pickle these days, and I feel our country is more divided than ever. However, I don't want to discuss that here. I would be too afraid to spread more division. Instead, lets unite with some FOOD!


I am so lazy and now consider myself a crock-pot pro. I mean let's break this down: I have 3 kids that need something constantly, a never-ending pile of laundry, a never-ending pile of animal fur, and other things that need to be constantly cleaned. I am not complaining, but I am just stating that there are other things I could be doing other than cooking dinner. Hahaha!

So, this week I looked at the Publix flier. I don't always shop there. The weeks I do shop there are when I can save a ton of money and get a ton of food. This week they had there packages of chicken breasts buy one, get one free. We won't be having chicken every night this week, but we will be eating it at least three nights this week. I saved 48.00 dollars at the store. I feel proud about that number, and the meals I have planned.

Chicken was on sale and you're probably like "what the heck does this have to do with your blog"? Well, two of the meals that we are having this week is because chicken was on sale at Publix.

Here we go:

Allegro Chicken

So go to the steak sauce aisle and find this marinade: Allegro. The Original or the Game Tame are really good. The Game Tame is slightly spicier, but it gives the chicken better flavor, in my opinion.

You take that marinade, and pour half the bottle into the crock-pot with 2-3 cups of water(2 is better, in my opinion). Then, you lay your chicken breasts into the pot, put it on low, and let it go. Seriously, that is all you do. Serve on top of rice(I use boil-in-a-bag rice) boiled in some Chicken Bouillon water and you have a delicious meal. What makes it even better is the water/marinade mixture left over. It is so good.

Now, take it step further: store the leftovers- juices and all. When you're ready, put some of that chicken between two slices of bread, and dip into some of the warmed up juices. Voila. You now have two meals.

Ranch Chicken

This is a new recipe that I was inspired to make from another recipe I saw on pinterest. It is so easy and I actually was able to taste it before writing this. Get ready.

Take your chicken breasts. Lay them in the crock-pot. Put a tablespoon of REAL butter on top of each(maybe a little more. *wink* *wink* Who hates butter? It's better for you than margarine.) Anyways, take a packet of Hidden Valley Ranch Dressing mix and pour some on top of each(I used the buttermilk kind). Let it go all day on low. It could possibly be on high. I have it on high right now to see if I can get a crispy outside despite these being skinless chicken breasts.

That is it. For. Real. And, it is so good. If I could, I would eat it all right now. It's almost torture that I have to wait until dinner. I will be serving this with mashed potatoes. My kids aren't really into eating meat. Lauralei will eat it, but the other two have to be in moods. So, the taters are for them. As most of you know, Sammie and I count our calories. That means that we eat meats high in protein and lean. We will indulge in these potatoes because I make them with fat free sour cream, salt, and pepper. I guess if you want to add some butter, you could add some of the butter from the chicken. How good would that be?

If you want to be extra lazy, and you don't want to peel potatoes, make instant or buy some already made in the refrigerated aisle.

Mesquite Pork Tenderloin

Guys, this iis the epitome of lazy. I get a pre-marinated mesquite pork tenderloin and put it in the crock-pot with about 2 cups of water. I have served this with potatoes, but we have used the leftovers for bar-b-que sandwiches. We also had the idea to make pork tacos with them. I haven't tried that yet, but there are so many potential ways of serving this.

There ya go people! I alternate each week between these. We have pork one week,and chicken the other. It never gets old. I hope y'all enjoy!
